Job Description

MAKO is a Michelin-starred sushi restaurant in the West Loop led by veteran chef BK Park. We are looking for an experienced and passionate Sushi Chef to join our team in a full-time capacity. Serious inquiries only, please!

Qualifications

• Knowledge of various sushi and preparation according to instruction/recipes and efficiently executing intricate, aesthetically pleasing sushi plates.
• Achieve and maintain proficiency in job functions of employees on the team, including but not limited to, follow the instructions to prepare food items and ingredients needed for menu items (including but not limited to sushi, maki, nigiri and sashimi) according to prescribed recipes and/or special requests.
• Ensure proper food storage, quality, and presentation standards, including temperature control, hygiene.
• Understand and follow the food allergy procedures and special orders/restrictions
• Effective communication with other staff and management
• A good team player and understand guest’s service
• Ability to work in a fast paced, demanding environment while maintaining the highest standard of food quality
• Can stand and exert well-paced mobility for periods of up to 8 to 10 hours

Requirements

• 5 years experience as a sushi chef, able to meet MAKO's standards of quality
• Flexible schedule-- able to work late evenings, Wednesday - Sunday, 1PM-close, & holidays (if needed).
• Able to work at additional restaurant locations if needed. (Juno Sushi in Lincoln Park).
• Key Skills: Controlling/managing a stressful & fast paced environment, Problem solving, Communication, Organization, Food Consistency & Standards
• Possess a current and valid ServSafe Food Handler Certification

Compensation

• Pay for this position starts at an average of $40/hr . This rate includes tips and is subject to increase based on your abilities, overall business volume, etc.
